Giant Cucumbers...and Other Produce

This week I tried making pickles for the first time.  Local fruits and veggies are actually in season right now, and can be found for pretty good prices.  Although the pickles did not really turn out that good, they got eaten anyways.  We've also started making and canning our own salsa since you can't buy it here, but its easy to make a ton and put it in jars for later.  It's making me wonder what other yummy food I can make and put in a jar.  If you have any favorite canning recipes (that don't involve fruit other than apples, mangos, or citrus) please share in the comments below. 

Here is a photo of our last cucumber, which they call "Ajur".  We don't make pickles out of these.  We just peel and cut up these giants and eat them with ranch dressing.  They are pretty yummy despite the difference in appearance from the ones we are used to.
