Eating Chadian Food with William and John Hardy
One of the staple foods here in Chad is "Esh". It is pounded grain cooked into the form of a dough-type substance. Usually it is made with millet, but sometimes with corn or wheat. The millet flour is cooked with water over a hot fire to make a paste, and then poured into a wooden bowl as it begins to solidify. It is then turned over onto a tray. To eat it, you grab two-fingers full and dip it in a meat sauce. There are all sorts of sauces or "mulahs". Some with a onion base, others with okra as the main ingredient. The one below is the okra kind - which, if you know okra, is really slimy! But it tastes so good! When Chadians eat together, the men eat in one place, and the women sit in another. The boys and I (James) enjoyed a plate of it all to ourselves.
